Collagen: A structural protein and an essential organic compound in the human body.

Optimal calcium-to-phosphorus ratio: Calcium and phosphorus are essential components of bones, teeth, and cartilage tissues, playing a critical role in reducing fracture risks in middle-aged and elderly individuals. The ideal calcium-to-phosphorus ratio in food ranges from 2:1 to 1:1. The calcium-to-phosphorus ratio in fish bones falls within this range, making it highly suitable for human absorption. 

Nutritional Composition of Fish Bones:

The water content, crude protein content, and fat content of fish bones, fish meat, and fish fillets are comparable.  Fish bones, similar to fish meat and fillets, serve as a protein source of high economic value.  The primary organic component of fish bone tissue is collagen, while the main inorganic components consist of hydroxyapatite crystals and amorphous calcium phosphate. Calcium salts deposit on collagen fibrils, forming hard bone tissue.
